Venison Sausage

Venison is a lean, richly flavoured meat, and we make it into sausages in-house. Cook the venison sausages gently in a frying pan or the oven, turning often, as lean meat can dry out. They go well with red wine gravy, mash and a spoonful of redcurrant jelly.
