Pork Chops

Within a 20-mile radius, our free-range pork chops are an honest cut that needs very little doing to them. Season well and fry or grill them for about five minutes each side, depending on thickness, until cooked through with golden fat. Rest them for a few minutes before serving. Apple sauce, mash and a green vegetable are the traditional partners, and a splash of cider in the pan makes a quick sauce.
