Chicken Supreme

A chicken supreme is a breast cut that is neat and quick to cook. Ours are free-range, from Suffolk. Brown it skin-side down in a hot pan, then finish it in the oven for 20 to 25 minutes until cooked through, and rest it. It goes well with a creamy mushroom, tarragon or white wine sauce and seasonal vegetables.
